Goat cheese salad ideas: Easy to make salads with goat cheese perfect for a light meal or to serve as an appetizer.

I love goat cheese and Ireland shops have several good varieties (local and not) that make it easy for me to add it to many dishes, may they be salads or appetizers.

These are a few easy-to-make goat cheese salad ideas I love.

The exact type of cheese I use in each depends on what I find on the day and is not a dealbreaker for any of these dishes.

However, for the oven-roasted ones, opt for the round forms or cheese as the rolls or more spreadable varieties do not come out as good.

Goat Cheese & beetroot Salad

  • Roasted beets
  • Goat cheese
  • Lamb Lettuce (corn salad leaves)
  • Walnuts
  • Dressing: olive oil, balsamic

This one works well with fresh goat cheese but also with more salty and crumbly varieties such as feta-like cheeses.

Warm goat cheese and baby spinach salad

  • Oven-roasted goat cheese medallions (score the cheese, place it on baking paper, score the top and lightly roast in the oven until warm and starting to melt slightly)
  • Baby spinach leaves
  • Cherry tomatoes, halved
  • Roasted almonds
  • Dressing: honey and olive oil

The best cheese for this one, in my opinion, is round logs of cheese with a firm, edible rind.

  • Baby Spinach leaves

  • Dressing: honey and lemon vinaigrette

Lamb Lettuce, Goat Cheese, and Pomegranate Seeds

  • Lamb Lattuce (corn salad leaves)

  • Pomegranate seeds
  • Dressing: lemon and olive oil dressing.

The combination with pomegranate seeds works exceptionally well as they add a little touch of sweetness and crunch to this otherwise very simple dish.

Broccoli and Goat Cheese

  • Lightly steam broccoli florets
  • Goat cheese
  • Cherry tomatoes, halved
  • Sesame seeds
  • Dressing: olive oil

For a nuttier flavor, I like to leave the broccoli florets almost raw, only lightly steaming them.

  • Prosciutto (optional, but Parma Ham works well with figs, if you want to add proteins, as its sweetness balances out the sharper kick of the arugula)

  • Dressing: olive oil or balsamic (but careful not to drench the prosciutto with it, keep the balsamic on the leaves and the figs only)

  • Arugula (rocket)

  • Dressing: olive oil and black pepper

  • Baby spinach leaves
  • Thinly sliced apples

  • Dressing: lemon and olive oil vinaigrette or cider vinaigrette (not too much of the apple flavor will be overpowering)
