Spinach and Feta Dip

Traditional Italian basil Pesto

  • Fresh basil leaves. The original recipe calls for 50 grams which is about 3 handfuls of them
  • 2 Garlic cloves
  • Pine nuts, one tablespoon
  • Parmesan cheese, 6 to 8 tablespoons
  • Olive oil, about one cup
  • Salt (if needed: you may not need it at all, depending on the parmesan you are using)
  • How to make: Blend basil, garlic, pine nuts, Parmesan, and olive oil in a food processor. Season with salt if needed (careful with this as the parmesan is quite salty itself, start slow with the salt)
