I love sheet pan dinners.
They are the easiest way to out together a nice family dinner without a lot of fuss and they also make great dinner party food: not only do they present well but they also allow you to stay with your friends while the oven does all the work. Win!
One of my favorite sheet pan recipes is with trout fillet. We get trout pretty often, usually already filleted, and depending on the mood I make it plain or add sauces or extra condiments.
In this post, I share my basic method for making sheet pan trout and some ideas on condiments, sauces and sides that go well with it.

What do you need to make sheet pan trout
You need very little to make sheet pan dinners. Your basics are:
- An ovenproof dish (either metal or ceramic, I use both depending on the size I need)
- Baking paper: you need a large enough sheet to cover the whole base of your tray
- A spatula
- Ingredients: trout, oil, salt – additional ingredients depending on recipe chosen
Sheet pan trout recipe: basic
The basic recipe for sheet pan tours is exceedingly simple and requires little more than putting your fish on the sheet and stick in the oven.
In particular, this is what I do:
- Take an oven tray and cover it with with a sheet of baking paper
- Put a glug of olive oil on the sheet
- Take the trout fillet and use the flesh side to spread the oil across the sheet
- Place the trout skin down on the sheet.
- Add as many fillets as you need, putting them nice and close to each other
- Dress with a little olive oil, salt and pepper
- Put in the over for about 20 mins, until fully cooked and serve hot with side of choice

What goes with trout dinner?
Once you know how easy it is to make trout, then the sky is the limit when it comes to recipes!
These are only some of the most delicious ideas:

This trout fillet recipe is perfect for a midweek family dinner or for a dinner party with friends. The trout has a lovely delicate flavor and the cherry tomatoes add a burst of sunshine that is a feast for the eyes and taste buds.
Ingredients
- Trout fillet (one per person)
- Broccolini
- Cherry tomatoes
- Sweet potatoes (one per person)
- Olive oil
- Salt and pepper
Instructions
- Cut the sweet potatoes in half (washed but with the skin on)
- Take an oven tray and cover it with with a sheet of baking paper
- Put a glug of olive oil on the sheet
- Put the sweet potatoes on the sheet, skin side up and put them in the oven to roast at 200C
- Take the trout and use a little olive oil to lightly grease both sides, skin and flesh
- Once the potatoes have been in the oven for about 15 mins, add the trout to their sheet, skin side down. Add salt and pepper to taste.
- Add as many fillets as you need, putting them ice and close to each other
- Add broccolini (washed) and cherry tomatoes, cut in half
- Turn the oven temperature down to 180C and let cook for about 20 mins
- Serve hot!
